One of my favorite fruits of all time is in season now! I love pomegrante. Here is a very simple use for them – to prepare an Indian classic – the raita. Raitas, creamy yogurt based sides, are made with fresh vegetables, cooked vegetables, or with spices or nuts. Serve this alongside any spicy entrée.
2 cups plain yogurt, whipped
1 teaspoon cumin seeds, toasted and ground
2 tablespoons sugar
¼ teaspoon table salt
½ teaspoon dried mint leaves
1 teaspoon dried jalapenos (optional)
3/4 cup pomegranate arils
In a bowl, combine all the ingredients except pomegranate. Mix well. Add the pomegranates and mix well. Chill covered for about 20 minutes before serving.
This is beautiful. A must try. I love how you take pomegranates to the savory end here, and how you get your adored fruit into almost everything! Also “arils”… who knew? Thanks for the inspiration, as always.
