We are using rhubarb in a Berliner Weisse style beer. The beer is already refreshingly tart from the fermentation and then the addition of rhubarb makes it even better. Tart, crisp, light and refreshing!
We boil down the rhubarb into a stringy gloppy slurry and add it to the beer during its conditioning phase.
My favorite way to use it is in a strawberry rhubarb muffin my sister made me when I was visiting her once. I’ve got a rhubarb plant in my garden that I will finally be able to harvest this year, and I’m excited to try some new recipes!
