I love Dina Yuen’s recipes. They are always fun, easy and simply delightful. I was recently speaking to her about featuring her on my site again (here is the first time in case you missed it) and she suggested this recipe. We have made it several times at home since then and it is a lovely heat buster. For the kids, I used apple juice and strawberries and it works just perfectly.

Frozen Cantaloupe in Strawberry Wine

While this is no doubt a fantastic fruit recipe for summertime, it’s also great year round as a palate cleanser or healthy, light dessert. Incredibly easy to make, the natural sweetness of the fruits and vibrant colors make this a gorgeous dessert that will impress your family and friends. To make this recipe kid-friendly, just substitute the red wine with sparkling grape juice.

Ingredients
¼ large ripe cantaloupe (cold), scooped using melon baller
8 strawberries, hulled
1/3 cup red wine (use one that you like to drink)
Fresh mint leaves, thinly sliced for garnish

Method

Place the cantaloupe balls into a large container and freeze for at least 3 hours or overnight (if overnight, thaw for 10 minutes before using). Remove from freezer and place into one large punch bowl or individual serving bowls. Set aside.

Using a blender or food processor, pulse the strawberries and red wine until smooth. Pour over the cantaloupe. Sprinkle the mint leaves over the cantaloupe before serving.
