That’s precisely what happened when I made Monica’s Onion Bread Stir-fry on page 198 of Modern Spice. The savory tang of turmeric, dried chile peppers plus onion bread was the combination that whisked me from my everyday kitchen and transported me to modern India. But forget the passport and packing. All I needed was a cast-iron skillet and Monica’s instructions—she was my personal guide the whole way. In less than 20 minutes I was sitting down to an absolutely divine, crisply exotic snack with tea (chai, of course). Almost like magic, the aroma drew both my kids into the kitchen wondering, “What did you make?” They both dug in with relish, and what started out as simply trying a new recipe quickly turned into a tasting party.

 

This onion-bread stir-fry is the perfect snack or side dish—and it will definitely reappear in our house as a side to pork, tofu, chicken, you-name-it—whenever I manage to get my hands on those divine onion rolls again. (All I’ll have to do is get to them before the hungry guys turn ‘em into salami sandwiches.) I subbed out the black mustard seeds with yellow ones since local stores turned up empty (sorry, Monica!), and realized at the last moment that all the salted roasted cashews had been eaten when I wasn’t around. (!) The trials and tribulations of living in a house with hungry kids, eh?

One thing’s for sure when you make this Onion Bread Stir-fry: not only will your house smell absolutely mysteriously exotic for hours afterward, you’ll never think of onion bread the same way again.
