 I love fenugreek. This gorgeous green is in season. Most folks write to ask me about dried fenugreek which is lovely, aromatic and one of my favorite dried herbs to season with. But fresh fenugreek adds just as much aroma and a delightful mild flavor to dishes. This recipe is a classic combination of greens and potatoes. You can also chop it real fine and knead it into bread dough, I have used it in stir-fries with tofu. But this humble way, is in my opinion, still the best.

Fenugreek Flavored Potatoes (Meethi Aloo ki Subzi)

Serves 4

Prep Time: 10 minutes

Cook Time: 20 minutes

4 medium potatoes

3 tablespoons vegetable oil

2 garlic cloves, crushed

2 bunches fresh fenugreek leaves, washed, dried and chopped

1/4 teaspoon turmeric powder

1/2 teaspoon red chili powder

1 ½ teaspoons coriander powder

Table salt to taste

Water, as needed

 

1.              Peel and dice the potatoes. Set aside.

2.              In a large skillet, heat the vegetable oil on high heat. Add the garlic cloves and the potatoes. Sauté for about 2 minutes.

3.              Add the fenugreek leaves, turmeric, red chili, and coriander powder. Sauté for another minute and add salt.

4.              Reduce heat and add 2-3 tablespoons of water. Cover and cook for about 8-10 minutes or until the potatoes are soft. Serve hot.

  1. Mmm…methi batata! I love this. It has wonderful grassy notes & fresh flavours. It’s one of my favourite comfort food, though I don’t get to eat it much with methi greens in recent years. I make this version with the seeds which brings in nuttier and addictively bitter flavours.

  6. I Liked the recipe. Why don’t you try this one. Fenugreek seeds powder, wheat flour, sugar, ghee. Make the balls(Laddu) and eat a small quantity everyday. Benefits more in winter, and to increase milk for mother.
