Folks – I am so thrilled to announce that there will be a new feature starting on Friday! I will be starting a new series titled: Monica’s Indian Express: Simple & Sassy Weeknight dishes. The focus will be on simple dishes, Indian and Indian-inspired, for weeknight meals. I have been talking a lot on Facebook about my dinners and there has been amazing interest. It occurred to me (yes, I am a late bloomer) that I should be posting the simple recipes that I make for dinner! The recipes are fuss-less but may require a quick painless trip to a spice market and/or your local Indian grocer! Once you are set with your spices, you will be ready to rock and roll. The dishes are meant to be served family style. With each dish, I will show you many variations so you can use what is in your pantry and in your vegetable bin. I hope you will enjoy it!

A taste of things to come:

A delightful grilled cheese sandwich ala Monica,

Instant meatball curry (yes, it can be done),

Peanut salad with cucumber and radish

Simple Egg Drop Soup

Potatoes with Green beans and cumin (yep, as good as they sound)

Eggplant cubes with basil and garlic

Potatoes with Fenugreek

Fried Egg Sandwich

Sriracha Spiked Roasted Cauliflower, Carrot and Baby Pea soup

Potatoes with fenugreek

Egg curry

Cumin rice and peas

Chicken vadouvan

When you’ve talked about what you were making for supper I’ve often thought, “Where’s the recipe?” I think this will also be a great introduction to Indian food cooking for some who believe cooking Indian food is always a major and time-consuming project. I know better, but not everyone does. This also sounds like it could be a new book for you. “Monica’s Indian Express” – now doesn’t that just sound like a book title?
