Years ago, many moons ago, I had created a recipe for a national magazine using a super simple spice-rub. I would like to share that with you here today with the addition of my newest obsession, maple syrup.
Spice-Rubbed Salmon Steaks with Mashed Potatoes
Serves 2
2 salmon steaks, each 6 to 8 oz
2 tablespoons extra virgin olive oil
1 tablespoon maple syrup
1/2 teaspoon dried red pepper, crushed ( or to taste)
1 teaspoon mild curry powder (like McCormick’s)
Table salt to taste
1. In a bowl combine the salmon, two tablespoons olive oil, red pepper, maple syrup, curry powder and salt. Coat the salmon with the mixture.
2. Preheat a medium size skillet on medium heat. Add the remaining olive oil to the skillet.
3. Place the salmon steaks on the skillet and cook for about 4-5 minutes on one side, then flip them over and cook for another 2-3 minutes until completely cooked through.
4. Remove the skillet and place each steak on a plate and top with the lemon slices.
This looks delicious! I will have to try this recipe.
Salmon is my favorite. I might try this with arctic char, since it’s more sustainable!
