I am so pleased to share with you the next recipe in my series: Monica’s Indian Express: Simple & Sassy Weeknight Dishes.
This is one of my favorite dinners. My hubby and boys love it as well. It is simple to make, of course, but you can really play up the flavors based on your own taste preferences. Dont like Sambal Olek or dont have it, try Sriracha? Don’t have that? Use Cilantro Chutney. Dont like eggs? Use scrambled tofu or scrambled paneer. Dont like cheese? Leave it out. Want some crunch? Add bacon. Want to kick it up a notch? Add some sliced jalapenos. I love to play with the sauce I use. I will often use a Chili Garlic sauce or a fiery hot sauce.. mmmm..

This looks delicious, Monica. Reminds me of a favorite sandwich of my childhood — kicked up a notch, of course. For those who use toaster ovens rather than toasters, putting the sandwich back in the oven once the cheese is added would allow one to actually melt the cheese rather than rely on the ability of the warm bread to melt it just a touch. At home we often added a slice of fresh tomato to the sandwich. That might be nice addition here — or at least would during the summer when delicious fresh tomatoes are available.

I love eggs in any form and this sandwich has haunted me (in a VERY good way) ever since I laid my eyes (oops, nearly typed ‘eggs’ there :)) on it. All I want to say is thanks for sharing this. I made this for breakfast 4 days in a row and would’ve made it for the 5th if I hadn’t ran out of eggs.
