Rainy Day Cooking – Monica’s Brown Basmati Rice with Pine Nuts, Mint, and Pomegranate (from Modern Spice)

I was delighted to open Monica Bhide’s book, “Modern Spice” and discover that it had several easy to make vegetarian recipes. One particularly caught my eye – brown basmati with pine nuts, pomegranate and mint. 

 

Pom 1 - Veggie Belly

The days have been rainy and the nights cool, here in Virginia. So I figured today was an appropriately wet and dreary day to make Monica’s rice dish. It turned out to be just what the doctor ordered – a steaming bowl of bay leaf scented rice dotted with buttery pine nuts and gorgeous red pomegranate seeds. Just looking at the colors in this dish makes me happy!

The pomegranate in this rice dish is pure genius. It’s a great departure from the raisins you’d usually find in pulao type recipes. Every spoonful of this dish contains bright, sweet, juicy pomegranate seeds that just pop in your mouth.

Pom 3 - Veggie belly

The best part is this recipe is easy and quick enough to make on a week day. Simply cook some basmati rice (I used white basmati because that’s what I had on hand; Monica’s recipe calls for brown basmati) with bay leaves and cardamom. When the rice is done, stir in toasted pine nuts, pomegranate seeds and mint. All you need is some raita or stir fried vegetables to make this a quick, comforting meal on a rainy day.
